as a workaround, i've also tried editing a working OOT block that i have on my machine, but when i recompile the block to have some new parameters (more variable fields in the gui) the options don't show up in GRC.

any help would be greatly appreciated.

That behavior generally occurs when the GRC .xml file of your block is incorrect in some way.
